Apple Pear Muffins

I’ve always make banana and blueberry muffins, but hardly use other fruit.  I remember in a pinch I have  substituted an apple or a pear for one banana when I didn’t have three bananas for the muffin or bread recipe.  Since I didn’t have any bananas today I decided to do an apple pear muffin and it came out moist and sweet, so delectable you can’t just have one.

Ingredients

1 1/2 Cups Flour
1 Tsp Baking Powder
1 Tsp Baking Soda
1/2 Tsp Salt
1/2 Tsp Cinniman
1 Egg
1/2 Cup Sugar
1/4 Cup Brown Sugar
1/3 Cup Melted Butter
1 Cup Apple
2 Cups Canned Pears

Preheat over 375°

Whisk the flour, baking soda, baking powder, and salt in a large mixing bowl.  In another bowl beat egg and mix in sugar, melted butter, and chopped fruit.  Make sure to chop the fruit in small pieces so it cooks evenly.

Mix the fruit mixture in the dry ingredients until everything is combined.  Make sure not to over mix.  The batter will be a thick consistency.

Scoop the batter into a lined or greased muffin tin.  I used a 1/4 cup measuring spoon to scoop the batter in the tin to make sure the muffins come out equal in size.

Bake for about 18 to 20 minutes until a toothpick inserted in the center of one muffin comes out clean.

Store in a airtight container.
