Not Your Mama’s Meatloaf

20161008_183217I made this meatloaf for my husband last night not thinking I was going to post the recipe, so I don’t have the exact measurements, but it came out so good I had to share it. When I make it in the future I will measure out everything and re-post.

About a 1lb or so of Ground Meat
1 Egg
1 Green Pepper
1/4 Cup Sweet Onion
1 Garlic Clove
Parsley
Oregano
Bread Crumbs
Tomato Past
Graded Pecorino Romano Cheese
Apple Cider Vinegar
Avocado Oil

Chop onion, garlic, parsley, oregano, and pepper in a chopper. Beat an egg in a large mixing bowl, add salt and pepper and beat the egg a little more. Add the onion mixture and the ground meat to the egg. Use your hands to mix everything together. Then slowly add the bread crumbs (probably about a cup) until the mixture is moist, but not wet and everything is bound together so you can form a log in a pan.

In another bowl mix about a 1/2 cup or so of tomato past with grated cheese and a teaspoon of vinegar. Spread the tomato mixture over the meatloaf.

Bake at 350 for about 45 minutes until the meat is cooked through and the tomato crust has browned slightly.
