Do you want a no fuss dessert that takes no time and looks fabulous? Try this quick balsamic strawberry meringue treat. This recipe serves two to four and can be stretched out by adding pound cake, biscuits, or cookie crumbles–bam now it’s a strawberry shortcake!
1 1/2 Cups Strawberries
1 Tbsp Balsamic Vinegar
1/2 Tbsp Sugar
2 Egg Whites
1 Tbsp Powdered Sugar
1 Tbsp Meringue Powder
1/4 Tsp Vanilla
Hull and cut strawberries in fours. Save a couple strawberries for garnish. Sprinkle strawberries with sugar and add balsamic vinegar.
Let strawberries macerate while you make the meringue.
Put two egg whites in a bowl. Use an electric mixer to form soft peaks.
Add powdered sugar, meringue powder and vanilla to egg whites. Continue to mix egg mixture with mixer until stiff peaks form.
Layer meringue and strawberries in a cup, add whole strawberry to garnish. Serve immediately.
