Are you looking for an easy gluten and dairy free meal? Try this simple rice pesto salad, rich in protein and gluten and dairy free–let me know what you think.
Cook rice by following the directions on the box. I used a brown rice mix as I find the texture of the different rice adds to the flavor of the salad.
Once rice is cooked add to bowl and add pesto. I used homemade pesto and did not include cheese as most pesto recipes call for (pine nuts, garlic, oil, basil, and baby spinach). Add rinsed and drained beans, olives, salt and pepper to taste.
