Chi Chi Salad


Chickpeas aka Chi chi, or garbanzo beans are one of the most versatile beans out there.  Whether you want to add them to salads, soups, or pasta they are great to have in the pantry.  The Chi Chi salad is inspired by the Italian deli’s antipasti counter, the bean salad is always on my shopping list.

2 Garlic Cloves
1/2 Tablespoon Italian Parsley
1 Tablespoon Olive Oil
1/4 Red onion
3 Cans Garbanzo Beans
Juice of 1 lemon
1 Celery Stalk
1Tablspoon of Apple Cider Vinegar
Salt and Pepper

Process garlic, parsely , oil, and half of the diced onion in a food processor.


Drain the beans and add into a large bowl. Add parsley mixture. Add lemon juice, diced celery, vinegar, and salt and pepper to taste.  Add parsley mixture.  Serve as a side dish, as part of an antipasti, or in a salad.
