I love making homemade dressings and mayonnaise. To go with my salt and garlic fries as well as peel and eat shrimp I decided to make an aioli with hot cherry peppers. It turned out better than I expected and I’m already thinking about other items to dip in it like maybe hot soft pretzels, steak, or veggies, or anything!
2 Egg Yolks
Juice from 1/2 of a lemon
1 Cup Olive Oil (Chilled)
1 – 2 Tablespoons of Hot Cherry Peppers
1 Tablespoon Italian Parsley
Salt and Pepper to Taste
Blend egg yolk with lemon juice in a food processor (if you want extra lemon flavor add a little lemon zest). Slowly add oil, alternating adding the oil and blending until thick. Pour dressing in a separate bowl. Add chopped peppers, parsley, and scallions to the food processor and chop until minced. Add the peppers mixture to the mayo. Add salt and pepoer to taste. You can blend it all together in the food processor for a smooth texture. Put the mixture in a ramekin and add a sliced hot pepper for garnish. Refrigerate immediately if you are not serving it right away.
